Chicken - 1 Kg
Charcoal
Oil - 1/2 Tsp
To Make Marinade
Onion - 1 No. Chopped
Ginger
Garlic - 4 Cloves
Red Chilli - 20 Nos
Sugar - 1 1/2 Tsp
Salt - 2 Tsp
Oregano - 2 Tsp
Smoked Paprika - 2 Tsp
Bay Leaf - 2 Nos
Juice Of 1 Lemon
Extra Virgin Olive Oil - 1/2 Cup
Coriander Leaves
Directions
Method
In a mixer jar, add the ingredients required for marination and grind them to a fine paste
Take the chicken in a bowl, add the ground marinade and mix well
Heat some charcoal on fire and place them in a small bowl
Keep the small bowl inside the bowl with the chicken
Add some oil to the charcoal, close it with a lid
Let it smoke and marinate for about 1 hour
Heat a grill pan and grill the marinated chicken pieces
Grill the chicken pieces till they turn golden brown in color and have a nice char to it
Serve the Peri Peri Chicken with lemon wedges and any dip of your choice.
