Salem Biryani
Ingredients
Mutton / chicken
Rice
1 cup pudina
i cup kothamalli
1/2 small onion
1 cup tomato
5-6 green chili
5 elachi
7 cloves
1 jathirai
1 start ainese
1 cinnamon
little kalpasi
1 sp sombu
2 pinch rose petal
2 biryani leaves
2 marati mokku
15 garlic
3 inch ginger
1/2 garam masala
1 sp coriander
1/4 sp turmeric
1/4 cardamom powder
1/4 cumin powder
Directions
Grind garlic, ginger, elachi, cloves, sombu and cinnamon
Add 1/2 coriander leaves and pudina leaves
Grind just before cooking as it may turn brown
In a kadai add ghee and oil add all the hard spices
Add green chilli
Add pudina and kothamalli fry little
Add onion till golden
Add tomato and the spice powder (1/2 garam masala,1 sp coriander ,1/4 sp turmeric ,1/4 cardamom powder ,1/4 cumin powder )
Add Salt and sauté for few min
Add the ground mix and fry well
Add mutton/chicken
Add water and bring to boil
Add rice and cook till done
