Thai Garlic Chicken
Ingredients
2 lb - 1 kg chicken thigh fillets
1 large lemongrass stalk
6 garlic cloves
1 lime
2 finely chopped Thai chilis
2 finely chopped mild chilis
2 tbsp fish sauce
3 tbsp soy sauce (light is best)
3 tbsp sherry
1 tsp sesame oil (black oil is better)
2 tbsp brown sugar
3 tbsp honey
½ tbsp black
2 tbsp vegetable oil
1 handful Coriander (cilantro
Directions
Step 1Crush the white end of the lemon grass stick then chop very finely. Place in mixing bowl. To the same bowl, add the minced or very finely chopped garlic cloves. The juice of one lime. The finely chopped mild and hot chilis. The fish sauce, soy sauce, dry sherry, sesame oil, brown sugar, honey and freshly cracked black pepper. Mix well.
Step 2Cut the chicken thighs in half. Place into the marinade, make sure you smother them well in the mixture. Cover and refrigerate overnight.
Step 3Take out the chicken from the fridge 20 minutes before grilling. Heat up your griddle pan to medium hot, not too high, or the sugars will burn. Add a little vegetable oil. Once charred nicely, lower the heat to continue cooking.
Step 4Strain the marinade and if your chicken pieces are almost cooked, pour only the juices over the chicken pieces. Leave to reduce until you have a nice glaze. Smother each piece into the glaze and serve over jasmine rice.
Step 5Chop coriander (cilantro) and sprinkle just before serving. Enjoy Thai Style Garlic Chili Chicken!
